Crock Pot Black Beans and Salsa Chicken

My husband is loving this crock pot kick I am on! He loved this recipe and it was so simple!  I have seen this recipe on a few sites and have tweeked it a bit to accomodate my pantry stockpile. It got rave reviews from those who ate it :)





Ingredients

4 frozen boneless chicken breasts
2 cans of corn
2 cans of back beans
1 can of tomatoes (i used with chillies to make it a bit spicy)
1 15 ounce can of salsa
1 block of cream cheese
1 cup of sour cream (or another block of cream cheese)
Noodles or Rice

Directions

Put chicken breasts in crock pot (frozen or not). Drain corn and black beans. Pour the corn, black beans, tomatoes, and salsa over top of the chicken. Cook on low for 4-5 hours (6 hours if chicken is frozen. At this point the chicken should be tender enough to shred. Shred the chicken with a fork. Add the cream cheese and sour cream and cook for an additional hour. Stir everything together and serve over noodles or rice. Enjoy!
